Alfalfa is an excellent source of Vitamins A, E, B1, B6, K, and D; and the minerals calcium, iron, potassium, phosphorus, and zinc. Alfalfa is also high in protein. Preliminary testing has suggested that alfalfa helps maintain healthy blood sugar levels as well as healthy cholesterol levels. Some nutritionists use Alfalfa as a source of S.O.D. (Superoxide Dismutase).* Note: Avoid alfalfa if you are allergic to grass, pregnant or breastfeeding or if certain autoimmune diseases run your family.
